Ultimate BLT Sandwich Recipe


(Yield: 1 1/4 cups Mayonnaise, 1 sandwich)
 
Olive oil Mayonnaise
1 cups Mayonnaise
1/4 cup Extra virgin olive oil
1/4 tsp. Garlic, fresh minced
1/2 tsp. Black pepper, ground

Sandwich

2 slices Toasted bread
3 Tbsp. Olive oil mayonnaise from above
6 slices Crisp pepper bacon
3 slices Tomato, sliced 1/2 inch thick
1 oz. wt, (1 handful) Gourmet salad greens mix

	
For mayonnaise - Whisk all ingredients together until smooth. Store 
refrigerated.

For sandwich - Spread toast with mayonnaise, then layer remaining 
ingredients. Cut in half and serve.

Vidalia Onion & Ham Bruschetta


4 ounces sliced lowfat ham cut into 1-inch pieces (3/4 cup) 
1 cup chopped Vidalia onion 
1 cup chopped plum tomatoes 
2 tablespoons reduced-calorie mayonnaise 
1 tablespoon prepared Dijon-style mustard 
8 large slices (3/4 inch thick) Italian bread, toasted 
Preheat oven to 400 F. In a medium bowl combine ham, Vidalia onion, 
tomatoes, mayonnaise and mustard. Arrange bread in a large baking 
sheet; top with ham mixture. Bake until heated through, 10 to 15 
minutes. Serve immediately at room temperature.
YIELD: 4 portions
	
Note: Onion and ham mixture can also be served cold as a sandwich 
filling in hollowed-out hard rolls or pita breads.

Tuna Melt


1 Can (12 1/4 ounces) water-packed white albacore tuna, drained 
1 Celery stalk, finely diced 
2 Tablespoons minced fresh parsley 
2 Tablespoons sweet green pickle relish 
1 Teaspoon fresh lemon juice 
1/2 Cup (4 ounces) mayonnaise 
4 Thick slices sourdough bread 
1 Cup (4 oz.) shredded sharp cheddar cheese 
4 Lemon wedges 
4 fresh parsley sprigs 
Preheat a broiler (griller). In a bowl, combine the tuna, celery, 
parsley, pickle relish, lemon juice and mayonnaise. Toss with a fork 
until well mixed.
	
Place the bread slices on a broiler pan. Divide the tuna mixture 
evenly among them, mounding it slightly. Sprinkle the cheese evenly 
over the tuna mixture.

Place under the broiler and broil (grill) until the tops just begin 
to bubble and are golden, 3 to 4 minutes. Watch carefully or the 
cheese may brown too much.

Transfer to individual plates and garnish with a lemon wedge and a 
parsley sprig. Serve immediately. Serves 4.

Triple Decker Turkey Bacon Sandwich


2 slices white bread
1/4 cup mayonnaise
3 lettuce leaves
 1 tomato, thinly sliced
3 slices turkey bacon
3 slices Cheddar cheese
	
1 Toast the bread slices.
2 Spread a thin layer of mayonnaise on each slice. Layer 
   bottom slice with lettuce, tomato, turkey bacon, and cheese. 
   Spread another thin layer of mayonnaise on the cheese; repeat 
   layers twice. Top with second slice of bread. Heat in 
   microwave for 45 seconds to 1 minute, or until cheese is melted.

Cholesterol King Heart Stopper


   The ultimate super bowl party sub. This is intended to 
   feed approximately 8 people and weighs in at over 6 pounds. 
   Remember to lift with your legs, not your back. Serve with 
   chips and a cold dill pickle. Prep Time: approx. 20 Minutes. 
   Cook Time: approx. 10 Minutes. Ready in: approx. 30 
   Minutes. Makes 8 servings. 
   
1 (1 pound) loaf French 
   bread, halved lengthwise
4 tablespoons butter, softened
1 clove garlic, minced
1 cup grated Parmesan cheese

1 head lettuce, shredded
1 pound sliced cooked ham
1 pound sliced deli turkey meat
1 pound sliced cotto salami
1 pound sliced mozzarella cheese
 1 pound sliced Swiss cheese
1 pound sliced Provolone cheese
2 tomatoes, sliced
1 sweet onion, sliced
1 (10 ounce) can pitted black 
   olives, sliced (optional)
1 (4 ounce) jar sliced 
   mushrooms, drained (optional)
1 green bell pepper, seeded 
   and thinly sliced (optional)
	
1 Preheat oven to 425 degrees F (220 degrees C). In a 
   small bowl, mix together the butter and garlic. Spread 
   garlic butter on both halves of bread, and sprinkle liberally 
   with Parmesan cheese. Place in preheated oven until cheese 
   is golden brown. Remove from oven and allow to cool slightly.
2 On the bottom half of the bread, place a layer of 
   lettuce. Alternating between meat and cheese, arrange layers of 
   ham, turkey, salami, mozzarella, Swiss cheese and 
   provolone. Add a layer of tomatoes, onion, black olives, 
   mushrooms, green peppers and anything else you like. Place the 
   remaining half of bread on top.
3 Place the sandwich on a cutting board, and slice into 
   individual servings.
